- Herb Moss Breadcrumbs: 2 slices rustic sourdough bread, torn into small pieces, 2 tbsp fresh parsley, finely chopped, 1 tbsp fresh dill, finely chopped, 1 tbsp fresh chives, finely chopped, 1 tbsp olive oil, zest of ½ lemon, pinch of salt
- Whipped Goat Cheese: 150 g soft goat cheese, 2 tbsp cream cheese, 1 tbsp milk or cream, freshly ground black pepper
- Platter Accompaniments: 1 cup baby arugula or microgreens, 1 handful radishes, thinly sliced, 1 small cucumber, sliced, edible flowers (optional for garnish), rustic crackers or crostini
Instructions
- Prepare the mushrooms:
- Heat olive oil and butter in a large skillet over medium-high heat. Add mushrooms and cook, stirring occasionally, until golden and tender, about 7–8 minutes. Add garlic and thyme; sauté 1 minute more. Season with salt and pepper. Set aside to cool slightly.
